How do I disable app updates with Assistive Access feature on iPhone?

Apple's apps are likely to be updated only when, (and when-ever), you install new iOS versions.

Your phone may or may not be set up to install updates automatically..

if needed, you can change that setting

Seems you may need to exit Assistive Access to check or change your iOS Update Settings:

Eg: You might want to turn off Automatic Updates if they are on:
